Elquinjena and I have decided that this year, we’re cutting back on certain things.. We regret to inform you all that.. there will be No Evil Fudge sent out. We don’t know what in the world happened to the time. How is Christmas only two weeks away?
Time is just not on our side, including the timing of our paychecks
However, there IS good news.. You can make Elquin’s Evil Fudge Yourself!
[wpfilebase tag=file id=424 tpl=flv-player /]
- 3 1/3 cups sugar
- 1 cup brown sugar packed
- 1 cup butter
- 1 can evaporated milk 12 oz
- 32 large marshmellow s cut in half
- 2 cups ( 12 oz ) semisweet chocolate chips
- 7 oz of milk chocolate candy bar ( break into pieces)
- 2 squares ( 1 oz each) semisweet baking chocolate
- 1 teaspoon vanilla extract
- 2 cups pecans ( optional )
- a greased ( with butter) 15 inch x 10 inch x 1 inch baking pan ( can use cookie sheets too )
ok in a large pan take the first 4 ingredients and put them in.
Turn burner on to med heat, cook and stir until sugar is dissolved.
Keep stir and bring mixture to a rapid boil. Boil for 5 mins this way, stirring constantly.
Remove from heat and add marshmellow s, stir until they are all melted and mixed in.
Add chocolate chips and stir untill they are all melted and mixed in well.
Finally add chocolate bars and baking chocolate, stir until they are mixed in well and melted. At this point the fudge should begin to set up a bit where as you mix it, it will pull away from the sides of the pan. Add your vanilla and nuts, stiring will become a bit harder at this point.
Pour this into the greased pan and shake pan around to even out the fudge.
Or IF your really good and have a marble counter top or large marble cutting board
pour the fudge on this and work on the marble, spreading and folding as it sets up further. form it into a large log shaped mound and let set.
Let the fudge rest and harden which takes a few hours or put in frig to chill.
